Delumptious Potatoes

Potatoes and sweet potatoes is very happy eats, full of nutrishitous and delectifying yummies!

Greek Roasted Potatoes
8 large potatoes, peeled and slice lengthwise into wedges
4 cloves garlic, minced
1/4 cup olive oil
1 and a quarter cups water
1 tablespoon oregano
salt and pepper

Preheat oven to 425. Mix all ingredients in a large glass pan. Be sure that the water, oil and spices are well blended and the potatoes have been 'rinsed' in the liquid, even if they are still partially sticking out of the juice. Bake uncovered 40 minutes. Remove from oven, stir and add more salt and pepper if desired. Return to oven for 40 minutes more. Serve with ketchup and enjoy!

Roasted Sweet Potato With Raisins And Sunflower Seeds
1 large sweet potato, peeled and cubed (small cubes – roughly 1 cm square)
¼ cup raisins
4 tablespoons sunflower seeds (no shells)
4 tablespoons olive oil
Salt and pepper
1 cup couscous
Boiling water to cover couscous
Sambal Oelek chili paste

Preheat oven to 425. Peel and chop sweet potato. Spread pieces evenly over the bottom of a large baking pan, along with raisins and sunflower seeds . Add olive oil, salt and pepper, stir all together until coated evenly with oil, and spread out in bottom of dish again. Bake for 25-30 minutes, until tender. Prepare couscous in time to let sit 5 minutes before serving. Place in sturdy bowl, cover with boiling water, seal top of bowl with a plate and let sit until tender. Serve potato cubes on top of couscous, with Sambal Oelek as desired. Enjoy!


Tuber Toss
4-5 medium potatoes
4 carrots
1 small sweet potato
1 tablespoon butter
1/4 cup milk
1 small onion
1 teaspoon butter
1 tablespoon honey
1/2 cup grated cheddar cheese
salt and pepper

Set large pot of water to boil. Peel and wash potatoes, carrots and sweet potato. Chop into 1-inch sized pieces (roughly). Put into boiling water all at the same time. Cook 10-15 minutes, until tender. Meanwhile, dice onion and fry in 1 teaspoon butter until golden. Add honey, salt and pepper, fry a few seconds more, and remove pan from burner and set aside. Drain cooked potatoes, and mash with 1 tablespoon butter and milk. Add onion mixture to mashed potatoes. Stir well. Divide evenly between three plates. Top with grated cheese. Serve with Sambal Oelek or ketchup, and enjoy!
